Recipe: Blueberry Mojito

A blueberry mojito is a fun summer twist on a refreshing rum cocktail. Make it a delicious mocktail by simply leaving out the alcohol!

Makes 1 cocktail.

2 oz white rum
1 oz blueberry simple syrup (recipe below)
1 sugar cube OR 1 tsp sugar
Mint leaves
Slices of lime
Club soda

Place several mint leaves, a few blueberries, and a slice of lime in a glass.

Top with the sugar. 

Using a muddler or wooden spoon, crush everything together in the bottom of the glass. 

Add blueberry syrup and rum. 

Add enough ice to fill the glass. 

Fill up the glass with club soda. 

Give your drink a stir to mix everything together.

Recipe: Blueberry Syrup

1 ½ cups blueberries (thawed, if frozen)
½ cup sugar
½ cup water

Combine blueberries, water, and sugar in a small saucepan over medium heat. Bring to boil, reduce to simmer and cook over low heat, stirring occasionally, for 10 minutes. Remove from heat. 

Place a fine mesh strainer over a large bowl. Carefully pour berry mixture into the strainer. Using a spatula, gently press the mixture into the strainer until all blueberries are crushed and all liquid has been pressed through to the bowl below. Discard the blueberries remnants left in the strainer. Allow the syrup to cool before using.
