    Creamy Homemade Cheddar Broccoli Rice on the Stovetop

    Cheddar Broccoli Rice

    Creamy cheese sauce and fresh broccoli turn rice into the ultimate comfort food and the perfect side dish in this cheddar broccoli rice recipe.

    Cheddar Broccoli Rice

    If you're someone who relies on Knorr cheddar broccoli rice, this is your new favorite recipe. In the time it takes to stir up that pouch you can have cheddar broccoli rice made from scratch. We're still using the stovetop, so there's no need to turn the oven on or get out a casserole dish.

    Ingredients

    • Butter
    • Cooked rice (white or brown rice)
    • Cream cheese (regular or low fat)
    • Cheddar cheese
    • Broccoli
    • Milk
    • Garlic powder
    • Onion powder
    • Salt
    • Pepper

    How to Make Cheddar and Broccoli Rice

    Melt butter in large pot over medium heat. Add cooked rice, stirring gently to combine.

    Cut the cream cheese into large cubes and add to the rice along with ½ cup of milk.

    Stir until cream cheese is melted and incorporated into the rice.

    Add cheddar cheese, garlic powder, onion powder, salt pepper and remaining ½ cup of milk.

    Stir until cheese is melted and everything is combined.

    Fold in cooked broccoli.

    Serve immediately.

    Tips on Cheddar Broccoli Rice

    This recipe is a great way to use up leftover, steamed rice. Either brown rice or white rice will work in this recipe, so use whatever you have on hand.

    Meal prep this recipe by cooking the rice and broccoli during your weekend meal prep. Store them in separate containers in the refrigerator until you're ready to cook cheddar broccoli rice.

    If you're leftover cheddar broccoli rice seems too thick for your liking, stir some milk - 1 tablespoon at a time - into the rice when reheating it until reaches your desired consistency.

    Yes, just be sure to thaw it completely before mixing it into your cheesy rice.

    Can I freeze cheddar broccoli rice?

    It's possible, but not recommended. If you do decide to freeze this recipe, add 2-3 tablespoons of milk to the rice when you heat it up.
