    Easy, 6 Ingredient Honey Mustard Chicken with Bacon

    Honey Mustard Chicken

    Some days dinner needs to come together fast, and Honey Mustard Chicken with Bacon lets you do just that. 

    Honey Mustard Chicken

    The honey mustard sauce is a quick, 4 ingredient combo using pantry staples, and then the chicken gets baked, so the oven does most of the work. And since bacon makes everything better, of course it’s getting sprinkled on top! 

    Growing up we ate Honey Mustard Chicken with Bacon over steamed rice, which is still how I recommend it. However, cooked quinoa or boiled redskin potatoes are also tasty with this dish. 

    What You Need

    • Boneless, skinless chicken breasts
    • Yellow mustard
    • Honey
    • Garlic powder
    • Curry powder
    • Bacon

    How to Make It

    Heat the oven to 375 degrees. 

    Spray a 9x13” pan with cooking spray. 

    Place chicken breasts in the prepared pan. 

    In a small bowl, mix together mustard, honey, garlic powder and curry powder.

    Spoon mustard mixture evenly over chicken. 

    Chicken ready for the oven

    Cover the dish with foil and bake for 25-30 minutes or until chicken is cooked through. 

    While chicken is in the oven, cook bacon in a skillet over medium heat until it’s crispy. 

    Allow bacon to cool before crumbling or cutting into small pieces. 

    Remove the chicken from the pan and reserve the pan sauce.

    Serve chicken over rice. Top with a tablespoon or two of sauce from the pan. Sprinkle with bacon bits.

    Tips for Honey Mustard Chicken

    What other cuts of chicken can I use?

    Boneless, skinless chicken thighs also work great in this dish. You may need to cook them a little longer, so use a meat thermometer to make sure your chicken is cooked through. You want a temperature of 165 degrees for chicken. 

    What kind of bacon should I use?

    Use any kind of bacon you want - thick cut, standard cut, maple - it’s all delicious. 

    Can I use other mustards? 

    You can skip the dijon and stone ground mustards for this dish. Plain, yellow mustard works great with the honey and spices. 

    How can I do some meal prep with this recipe?

    Cook the bacon ahead of time. The night you make the chicken, wrap the cooked bacon in tin foil and place it in the oven for the last 5 minutes of cooking time. You can also make the rice a day or two ahead of serving, then just reheat the night you make the chicken.
