Chili Garlic Roasted Carrots
Peel 5-6 large carrots and cut into 3-4 inch long pieces.
In a small bowl, combine 1 Tbsp olive oil, ½ tsp chili powder, and ½ tsp garlic powder.
Place carrots on a parchment lined baking sheet. Drizzle oil and spice mixture over carrots and toss to coat. Spread carrots out in an even layer.
Roast at 400 degrees for 30 minutes, or until carrots are tender - flipping halfway through cooking time.
Serve with a creamy dip made by combining 2 Tbsp sour cream or plain Greek yogurt with 1 tsp lemon juice and ⅛ tsp salt.
