Lemon Simple Syrup

Ingredients:
– Sugar
– Water
– A fresh lemon

Carefully peel a large piece or two of rind off of the lemon. Try to get as little of the white pith under the peel as possible.

Combine water and sugar in a small saucepan over medium-high heat and stir until sugar is dissolved. Remove from heat. Add lemon peel and let the mixture cool to room temperature.

Remove the lemon peel.
Refrigerate syrup until ready to use. (Note: You can leave the peel in the syrup for up to 24 hours for a stronger flavor.)

Use lemon syrup to sweeten iced tea, or mix with soda water for a quick homemade lemonade.
