Pumpkin Pinwheel Appetizer with Whipped Ricotta


With an electric mixer, whip together pumpkin, ricotta cheese and spices. 

Spread pumpkin mixture on thawed puff pastry that's been rolled out. 

Sprinkle with parmesan cheese and pistachios. Brush edge with a little water and roll into a log. 

Slice roll into 1 inch pieces and place on a parchment-lined baking sheet. Bake at 400 degrees for 18-20 minutes. 

Combine melted butter and maple syrup. Brush baked pastry with the butter/syrup mixture. 

Serve warm or at room temperature.
