Heat oven to 400 degrees.Wash the Brussels sprouts. Cut off the bottoms, then cut the Brussels sprouts in half - lengthwise. Place onto a metal sheet pan.
Cut the bacon into small pieces, and add to the sheet pan. Drizzle with 2 tablespoon olive oil and sprinkle with salt and pepper. Toss well to coat everything.
Roast for 25 mins, tossing a couple times during baking. Remove from oven and toss with apple cider vinegar and remaining 1 tablespoon olive oil. Serve warm. Enjoy!
