Slow Cooker Pineapple Pulled Pork Tacos

In a small bowl, make a spice rub by combining chili powder, onion powder, garlic powder, salt, oregano and cinnamon. Set aside.

Finely dice fresh pineapple. Slice white or yellow onions. Place onions and pineapple in the bottom of a slow cooker.

Rub all sides of 3 lbs of country-style pork ribs with the spice rub. Place pork on top of pineapple and onions in the slow cooker. Cover and cook on high for 4 hours or low for 7 hours.

Once the meat has cooked, turn off the slow cooker and allow it rest for 15-20 mins. Chop meat into bite sized pieces using a sharp knife or use 2 forks to pull the meat apart.

Using a slotted spoon, remove as much of the onion and pineapple as you can from the liquid in the slow cooker and add it to the pulled pork. Mix everything together well.

Enjoy in tortillas with your favorite taco toppings! You can also use this pulled pork for sandwiches or as a topping for homemade pizza.
