Slow Cooker Roast Chicken

Using 3-4 large sheets of tin foil, create several balls of foil and place them on the bottom of your slow cooker. 

Place a 5-7 pound whole, raw chicken on top of the balls of foil. (It's OK if the chicken touches the side of the slow cooker a little bit.) 

Rub the chicken with 1-2 Tbsp of vegetable oil (or other neutral tasting oil) and sprinkle with salt and pepper. 

Put the lid on the slow cooker and cook your chicken for 3.5-4 hours on high or 6-7 hours on low. Serve and enjoy! 

Note: Slow cooker roast chicken will NOT have crispy skin. Put the cooked chicken under the broiler for a few minutes to make the skin golden and crispy.
