Whipped Feta Bruschetta with Pistachios 

Ingredients:  – Feta cheese – Cream cheese – A lemon – Sun dried tomatoes, oil packed

– Garlic – Pistachios – Chives – French bread – Olive oil

Cut bread into 1" thick slices. Brush both sides with olive oil and arrange on a baking sheet.

Toast the bread under the broiler, flipping to brown both sides. Set aside. 

Combine sun dried tomatoes, oil from the jar of tomatoes, lemon juice, and garlic in a food processor. 

Process until the mixture is well combined. Set aside.

Combine cream cheese and feta in a food processor. Process until smooth and no lumps remain. 

Assemble by spreading cheese mixture on a slice of toasted bread. Top with tomato mixture and sprinkle with chopped pistachios and chives. 

Alternatively, assemble as a layered dip and serve the toasted bread on the side.
