Ingredients

Scale
  • Half of a French baguette
  • 2 Tbsp extra virgin olive oil
  • 12 cherry tomatoes
  • 12 slices fresh mozzarella cheese
  • 12 fresh basil leaves
  • 1 tablespoon coarse salt
  • 3 tablespoons balsamic drizzle

Instructions

Make the Crostini

Slice the French bread into rounds.

Brush both sides of the bread with olive oil and place in a single layer on a baking sheet.

Place under the broiler or in a toaster oven and toast until the top side is golden brown.

Remove, flip crostini over, and return to the broiler to brown the other side.

Once the second side has toasted, remove the bread slices from the oven and rub one side of each piece with a peeled garlic clove.

Assemble to Crostini

On a piece of crostini, place a slice of mozzarella cheese, a slice of tomato (or a cherry tomato, cut in half). Repeat with remaining crostini.

Sprinkle salt on top of tomatoes.

Drizzle the crostinis with balsamic glaze.

Roughly chop or tear the fresh basil. Sprinkle generously over crostini.

Serve immediately.
