Combine strawberries, honey, and water in a small saucepan over medium heat.
1 cup strawberries, 0.5 cup honey, 0.75 cup water
Bring the mixture to a bubble, reduce the heat to low, and allow the mixture to cook until the berries are soft.
Remove from heat.
Using a potato masher, crush the berries in the pot.
Allow mixture to sit and cool for 5-10 minutes.
Pour berry mixture through a fine mesh sieve placed over a bowl.
Discard the berry remnants in the strainer.
Cool the syrup completely before using in your cocktail.
Make the Cocktail
Place the elderflower liqueur and strawberry honey syrup into a wine glass.
0.5 oz elderflower liqueur, 1 oz strawberry honey syrup
Top with sparkling rosé.
5 oz sparkling dry rosé wine
Stir gently, sip, and enjoy!
Notes
I love using a sparkling rosé in this drink, but any rosé is delicious. If you’re not into bubbles, select a traditional bottle of rosé. You can also make this cocktail with a dry white wine, if you’re not into rosé or don’t have any on hand.
