Fresh Strawberry Bites with Cream Cheese

With a crisp phyllo shell, a velvety ricotta-cream cheese filling, and a fresh strawberry topping, these fresh Strawberry Bites with Cream Cheese are the perfect sweet treat.

large strawberries

aprox 1 cup, diced

Instructions
Bake phyllo shells on a baking sheet according to package directions.
1 package mini phyllo shells
Cool to room temperature.
In a small bowl, whisk together ricotta cheese, cream cheese, powdered sugar and vanilla or mix with a hand mixer. Set aside.
⅓ cup ricotta cheese,
2 Tbsp softened cream cheese,
¼ cup powdered sugar,
½ tsp vanilla extract
Clean the strawberries and remove the green tops.
Dice berries into small pieces.
In a separate bowl add diced strawberries, fresh orange juice, chopped mint, and honey. Stir gently to combine.
5 large strawberries,
1 Tbsp fresh orange juice,
½ tsp honey,
1 tsp chopped mint
To Assemble
Place half a teaspoon of the cream cheese mixture into each phyllo shell. (You can use a piping bag and tip here if you prefer.)
Top with a half teaspoon of the strawberry mixture.
Serve immediately.
Notes
The juiciness of the berries will soften the phyllo shells if not eaten immediately. Assemble these bites right before you’re going to serve them.
