And since the phyllo cups hold up on their own, there’s no need for paper liners or special equipment like a mini muffin pan. Plus, they’re just the right size for popping into your mouth – no utensils required! 😉

Ingredients

Ingredients for Strawberry Bites with Cream Cheese.
  • Mini phyllo shells – Find these little phyllo dough cups in the freezer section of your grocery store. 
  • Ricotta cheese – Either part skim or whole milk ricotta works well here. 
  • Cream cheese – Any dairy cream cheese works in this recipe – regular, low fat, or fat free. 
  • Powdered sugar – For sweetening the cheese mixture, powdered sugar mixes in the best without being grainy. 
  • Vanilla extract – 100% pure vanilla extract tastes the best. 
  • Strawberries – Fresh strawberries are a must in this recipe. Frozen ones are too juicy and mushy for the tart shells. 
  • Orange – Squeeze half of a fresh orange for this recipe. It makes a big difference in flavor instead of using bottled juice.  
  • Mint – Fresh mint gives the best flavor and will look the best in your final dish. 
  • Honey – Add a little sweetness to the berries while giving it a little added flavor. Swap this out for agave nectar, if desired. 

How to Make Strawberry Cream Cheese Bites (Step by Step) 

Bake phyllo shells according to package directions. Cool to room temperature.

In a small bowl, combine the ricotta cheese, cream cheese, powdered sugar and vanilla.

Whisk together and set aside.

Clean the strawberries and remove the green tops. Dice into small pieces.

In a separate bowl add diced strawberries, fresh orange juice, chopped mint, and honey.

Stir gently to combine. 

To assemble:

Place half a teaspoon of the cream cheese mixture into each phyllo shell.

Top with a half teaspoon of the strawberry mixture. Serve immediately.

Fresh Strawberry Bites with Cream Cheese 

With a crisp phyllo shell, a velvety ricotta-cream cheese filling, and a fresh strawberry topping, these fresh Strawberry Bites with Cream Cheese are the perfect sweet treat.

Ingredients
 

  • 1 package mini phyllo shells
  • cup ricotta cheese
  • 2 Tbsp softened cream cheese
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • 5 large strawberries, aprox 1 cup, diced
  • 1 Tbsp fresh orange juice, ½ of an orange
  • 1 tsp chopped mint
  • ½ tsp honey

Instructions
 

  • Bake phyllo shells on a baking sheet according to package directions.

  • Cool to room temperature.
  • In a small bowl, whisk together ricotta cheese, cream cheese, powdered sugar and vanilla or mix with a hand mixer. Set aside.
    ⅓ cup ricotta cheese, 2 Tbsp softened cream cheese, ¼ cup powdered sugar, ½ tsp vanilla extract
  • Clean the strawberries and remove the green tops.
  • Dice berries into small pieces.
  • In a separate bowl add diced strawberries, fresh orange juice, chopped mint, and honey. Stir gently to combine.
    5 large strawberries, 1 Tbsp fresh orange juice, ½ tsp honey, 1 tsp chopped mint

To Assemble

  • Place half a teaspoon of the cream cheese mixture into each phyllo shell. (You can use a piping bag and tip here if you prefer.)
  • Top with a half teaspoon of the strawberry mixture.
  • Serve immediately.

Notes

The juiciness of the berries will soften the phyllo shells if not eaten immediately. Assemble these bites right before you’re going to serve them.

Recipe Tips

The juiciness of the berries will soften the phyllo shells if not eaten immediately. Assemble these bites right before you’re going to serve them. 

When mixing by hand, the filling may have small lumps in it. This is fine and won’t be noticed given that the cream cheese mixture will be completely covered by the strawberries. However, if you want a completely smooth filling, use a hand mixer to whip the filling and remove the lumps.

You will likely have some extra filling from the cream cheese mixture. Use it as dip for whole strawberries, grapes, and other fruit.

Making Fresh Strawberry Bites Ahead of Time

The cream cheese mixture can be made up to 3 days before serving. Store it in an airtight container in the refrigerator. Bring the filling up to room temperature before using. 

The phyllo shells can be baked the morning before you’re going to serve them. (Do not refrigerate them after baking.) 

Washing the berries and adding sugar to them will cause them to start releasing juices, so the strawberry mixture should be made as close to serving as possible, no more than 1 hour in advance.
