I used to always say I didn't like gin. Until a very talented mixologist introduced me to all the varieties of gin that exist. And now it's my first choice spirit.
Gin is a clear spirit that is distilled from juniper berries and other botanicals, which give it a distinctive flavor. That "pine tree" flavor? It's the juniper berries.
But not all gins have the same amount of juniper in them. And some have so many other delicious botanicals in them (herbs, spices, flowers), that you can barely taste the juniper!
These gin cocktails feature other ingredients such as bitters, citrus, homemade syrups, and/or liqueurs, which are used to add variety and additional flavor to the drinks.
