    Rhubarb Gimlet for gin lovers.

    A quick and easy cocktail that’s perfect for warm spring and hot summer days, this rhubarb gimlet is crafted with your favorite gin, homemade rhubarb syrup and fresh lime.

    Gimlet cocktails are a delicious, 3 ingredient classic gin drink with endless options for customizing. Their base is gin and fresh lime juice, leaving the simple syrup as an easy way to add variety and variation to your gimlet cocktails. 

    Rhubarb is plentiful in the late-spring/early-summer here in Michigan, but it’s a tricky vegetable to work with because it has such a tart flavor. Turning a couple cups of rhubarb into syrup is a perfect way to enjoy the flavor of rhubarb in your cocktails. Freezing fresh rhubarb will allow you to make the syrup for this Rhubarb Gimlet well past rhubarb season and into the summer.

    What’s in a Rhubarb Gin Cocktail?

    • Gin - Choose your favorite gin for this recipe. If you’re new to gin, try a London dry gin, like Beefeater, for this gimlet. 
    • Rhubarb Syrup - Made with fresh or frozen rhubarb, rhubarb simple syrup takes about 10 minutes to make and only 3 ingredients. Get the recipe and instructions on my rhubarb syrup page. 
    • Limes - Fresh lime juice is best for this cocktail. You’ll need about 1 lime per drink.

    How to Make a Rhubarb Gimlet

    In a cocktail shaker filled with ice cubes, combine gin, rhubarb simple syrup, and fresh lime juice. Cover and shake well.

    Strain into a coupe glass.

    Garnish with a lime wheel or lime peel. 

    Sip and enjoy! 

    What to Serve with a Rhubarb Gin Cocktail

    Ingredients
      

    • 2 oz gin
    • 1.5 oz rhubarb syrup
    • 1 oz fresh lime juice

    Instructions
     

    • In a cocktail shaker filled with ice cubes, combine gin, rhubarb syrup, and fresh lime juice.
    • Shake well.
    • Strain into a chilled coupe glass.
    • Garnish with a lime wheel.
    • Sip and enjoy!
