Wash and slice the peaches and place them in a quart mason jar.
1.5 cups fresh peach slices
Fill the jar with bourbon. It should cover all of the peaches
3 cups bourbon
Cover tightly and store in a cool, dry place for 4 to 5 days.
Pour the bourbon through a fine mesh strainer to remove the peaches.
Discard the used peaches.
Store your peach bourbon in a cool, dry place for up to 6 months or in the refrigerator for up to 1 year.
Notes
A note on timing: When working on this infusion, 4 days was the minimum amount of time to let it sit for a strong peach flavor. 5 days works too, but after that there’s no noticeable change in peach flavor. So there’s no need to keep it going for longer.
