This Roasted Garlic and White Bean Spread is packed full of flavor and is both an easy appetizer and a meal-prep-friendly snack. Canned white beans, roasted garlic, cottage cheese, and olive oil blend together for a delicious dip to serve with fresh veggies and crackers, or as a spread for sandwiches.
Place all ingredients into a food processor or high speed blender.
Process until smooth.
Place into an airtight container and refrigerate until ready to use.
Serve with crostini, pita chips, and/or sliced, raw veggies.
Store in the refrigerator for up to 5 days.
Notes
Do not swap out the roasted garlic for raw garlic. The flavor will be way too intense and the dip will taste spicy and likely be inedible. Cooking the garlic is necessary to mellow its flavor before using in the recipe. If you don’t want to take the time to roast the garlic, swap it out for 1-2 teaspoons of garlic powder. (Start with 1 teaspoon, taste your spread, then adjust to taste.)
