Ingredients

  • White beans – Also known as great northern beans or cannellini beans. We’re using canned beans in this recipe, so there’s no need to prep or soak dried beans.
  • Roasted garlic – Cloves of roasted garlic give this recipe a ton of flavor. Do not substitute with raw garlic. It must be roasted before using. >How to Make Roasted Garlic in the Oven
  • Lemon juice – Fresh lemon juice is best here, but use what you have on hand. You’ll need about half a lemon for this recipe. 
  • Extra virgin olive oil – Regular olive oil or garlic-infused olive oil both are delicious in this recipe, so take your pick. 
  • Cottage cheese – This gives the dip an extra creaminess and protein boost. Your choice on whether this is small curd or regular cottage cheese. Either low fat or 4% cottage cheese works well in this recipe. 
  • Salt – Kosher salt is best. 

How to Make Roasted Garlic and White Bean Spread (Step by Step)

Place all ingredients into a food processor or high speed blender.

Process until smooth. 

Serve immediately or place into an airtight container and refrigerate until ready to use. Store in the refrigerator for up to 5 days. 

Serve chilled or at room temperature with sliced vegetables and/or homemade crostini

Note: Do not swap out the roasted garlic for raw garlic. The flavor will be way too intense and the dip will taste spicy and likely be inedible. Cooking the garlic is necessary to mellow its flavor before using in the recipe. If you don’t want to take the time to roast the garlic, swap it out for 1-2 teaspoons of garlic powder. (Start with 1 teaspoon, taste your spread, then adjust to taste.)

This Roasted Garlic and White Bean Spread is packed full of flavor and is both an easy appetizer and a meal-prep-friendly snack. Canned white beans, roasted garlic, cottage cheese, and olive oil blend together for a delicious dip to serve with fresh veggies and crackers, or as a spread for sandwiches.

Ingredients
 

  • 1 – 15 oz can white beans, great northern beans or cannellini beans
  • 6-8 cloves roasted garlic
  • 1 tsp lemon juice
  • 2 Tbsp olive oil
  • cup cottage cheese
  • ½ tsp salt

Instructions
 

  • Drain and rinse the can of white beans.
  • Place all ingredients into a food processor or high speed blender.
  • Process until smooth.
  • Place into an airtight container and refrigerate until ready to use.
  • Serve with crostini, pita chips, and/or sliced, raw veggies.
  • Store in the refrigerator for up to 5 days.

Notes
