Whip up a batch and keep it in the fridge for a healthy snack with come veggie sticks, a flavorful sandwich spread, or even a simple addition to a charcuterie board. There’s something undeniably comforting about a creamy, flavorful dip that comes together with just a few simple ingredients. This Roasted Garlic and White Bean Spread is a perfect example—smooth, garlicky, and packed with protein, it’s as delicious as it is versatile.
Whether you’re serving it as a dip alongside fresh veggies and crunchy pita chips or spreading it on a sandwich in place of mayo, this recipe is sure to become a staple in your kitchen. Best of all, it’s incredibly easy to make, requiring just a quick blend of pantry-friendly ingredients.
The big flavor in this spread comes from the roasted garlic, which adds a rich, mellow depth of flavor without the harsh bite of raw garlic. Combined with creamy white beans, a hint of bright lemon juice, and a drizzle of olive oil, it creates a smooth, well-balanced dip that’s both nourishing and indulgent.
A scoop of cottage cheese adds extra creaminess and a boost of protein, making this spread even more satisfying. And since everything comes together in a food processor, you can have this white bean dip recipe ready to go in just minutes.
What’s in Garlic and White Bean Spread
- White beans - Also known as great northern beans or cannellini beans. We’re using canned beans in this recipe, so there’s no need to prep or soak dried beans.
- Roasted garlic - Cloves of roasted garlic give this recipe a ton of flavor. Do not substitute with raw garlic. It must be roasted before using. >How to Make Roasted Garlic in the Oven
- Lemon juice - Fresh lemon juice is best here, but use what you have on hand. You’ll need about half a lemon for this recipe.
- Extra virgin olive oil - Regular olive oil or garlic-infused olive oil both are delicious in this recipe, so take your pick.
- Cottage cheese - This gives the dip an extra creaminess and protein boost. Your choice on whether this is small curd or regular cottage cheese. Either low fat or 4% cottage cheese works well in this recipe.
- Salt - Kosher salt is best.
How to Make Roasted Garlic and White Bean Spread (Step by Step)
Place all ingredients into a food processor or high speed blender.
Process until smooth.
Serve immediately or place into an airtight container and refrigerate until ready to use.
Store in the refrigerator for up to 5 days.
Serve chilled or at room temperature with sliced vegetables and/or homemade crostini.
Note: Do not swap out the roasted garlic for raw garlic. The flavor will be way too intense and the dip will taste spicy and likely be inedible. Cooking the garlic is necessary to mellow its flavor before using in the recipe. If you don’t want to take the time to roast the garlic, swap it out for 1-2 teaspoons of garlic powder. (Start with 1 teaspoon, taste your spread, then adjust to taste.)
Roasting Garlic in Your Oven
I love roasting garlic in the oven because it’s totally hands off. Buy peeled garlic cloves at the grocery store, add them to an oven-safe dish filled with oil, bake, and that’s it! Perfect little roasted garlic cloves ready to go into any recipe. Get all the details and instructions for roasting garlic in the oven (without foil!) over on my Roasted Garlic Confit page.
How to Serve Roasted Garlic and White Bean Dip
To use this recipe as a dip, serve it in a small bowl alongside raw veggies (carrot sticks, celery sticks, sliced cucumbers, sliced bell peppers), pita chips, or homemade crostini. This white bean spread is also delicious on a sandwich in place of mayonnaise.
