This delicious cheeseburger sliders recipe changes things up by tasting like your favorite burger but resembling a sloppy joe. Easy to make in advance, they're perfect for feeding a crowd, game day, or for a quick weeknight meal.
These mini burgers aren't your White Castle sliders. We're adding a lot more flavor - and about three times the cheese. But unlike their sandwich counterparts, this cheeseburger slider recipe skips the heavy layer of melted butter and brown sugar over the top half of the rolls because that's not part of a good cheeseburger.
With a warm, cheesy filling on soft Hawaiian rolls, this easy cheeseburger sliders recipe is perfect for game day, super bowl parties, and potlucks. Serve them for dinner on busy weeknights or as part of an appetizer spread for a hungry crowd. I love them with a pitcher of Pomegranate Lemonade and some homemade potato chips.

What’s in Cheeseburger Sliders
- Ground beef - I used 80/20 and 85/15 ground beef when testing, but you could use very lean ground beef if you prefer.
- Onion - I used white onions and yellow onions when testing this recipe and both worked great.
- Ketchup - Choose your favorite ketchup here.
- Yellow mustard - Don't try to fancy things up with dijon mustard. Plain, bright yellow mustard works best here. The strong vinegar flavor in the mustard keeps these sliders from getting too heavy.
- Garlic powder - Feel free to swap this with onion powder if you don’t like garlic.
- Salt - This recipe just needs a little salt, though feel free to leave it out if you need to.
- Cheddar cheese - We’re using both sliced and shredded cheddar cheese for this recipe. I tested with both mild and sharp cheddar cheese and both were delicious.
- Heavy cream - This brings creaminess to the filling and helps the shredded cheese melt into the mixture evenly. You can swap it out for half and half or whole milk, if you prefer.
- Olive oil - Just a little on the top of the buns helps the sesame seeds stick to the buns and keeps the foil from sticking while baking.
- Sesame seeds (optional) - These are 100% options. I love the look of them, but they don’t add a lot of flavor, so use as desired.
- Hawaiian rolls - Any brand works great for these sweet, puffy yeast rolls. If you don't like Hawaiian rolls, you can use small, soft dinner rolls instead.
How to Make Cheeseburger Sliders
In a large skillet over medium heat, cook the ground beef and diced onion until beef is no longer pink. Drain off excess oil.
Stir in ketchup, mustard, garlic powder, and salt.
Once well mixed, add in shredded cheese and heavy cream. Stir gently until combined and the cheese is melted. Remove from heat.
Lightly spray a 7x11 inch baking dish with cooking spray.
Slice Hawaiian rolls through the middle and place the bottom buns into the casserole dish. Layer half of the cheddar cheese slices on top of the rolls.
Spread the meat mixture evenly over the cheese slices and rolls.
Layer remaining slices of cheese onto ground beef. Place tops of Hawaiian rolls on the beef mixture.
Spray or brush the tops of the rolls with olive oil and sprinkle sesame seeds over the tops of the buns.
Cover the dish with tin foil and bake for 15 minutes or until the sliders are heated through and all of the cheese has completely melted.
Use a serrated knife to break apart the slider rolls and serve immediately along with your favorite burger toppings.
Make Ahead Cheeseburger Sliders
This is a great make ahead meal or game day appetizer! Follow the recipe and instead of placing in the oven, cover with foil and place in the refrigerator for up to 2 days. Bake as directed, adding 2-3 minutes of time to compensate for the cold sliders.
Easy Drink Pairings
Creamy cheeseburgers need a tart and refreshing drink. Serve these sliders alongside a pitcher of Pomegranate Lemonade or these non-alcoholic Strawberry Mojito Mocktails. Want something boozy? Try my Blueberry Lemonade with vodka or a classic Lemon Drop Martini.
What to Serve with Cheeseburger Sliders
I love serving all the classic burger sides with these sliders like french fries, or my baked potato chips, savory sweet potato chips with Parmesan cheese, or a fresh apple salsa with strawberries.
