Coconut rum, bright pineapple juice and tart cranberry juice layer together for a tropical twist on a classic rum cocktail. The Malibu Bay Breeze is a refreshing summer cocktail that’s made in the glass for the easiest sip on your warm weather menu.

I definitely loved sweet cocktails in my early 20s. When I first started ordering drinks at a bar, I had two favorites – raspberry vodka with Sprite, and Malibu with pineapple (and lots of bright red maraschino cherries!).

Had I known about a Malibu Bay Breeze 20 years ago, I definitely would have been ordering it instead. I loved my sweet drinks, but the addition of cranberry juice cuts the sugar level of this cocktail, making much more palatable and more the vibe of 40+ year old me. 

A Malibu Bay Breeze combines Malibu coconut rum with cranberry and pineapple juices, creating a refreshing and vibrant blend that’s perfect for any occasion. I love sipping this cocktail during the warm weather months, but it’s just as tasty when I need a reminder of summer during a Michigan winter.

Serve it poolside, at your next backyard barbecue, or summer party. This easy, make-in-the-glass cocktail is sure to impress your guests.

Ingredients

  • Malibu coconut rum – A classic coconut rum that’s easily found across the U.S., Malibu coconut rum is full of sweet coconut flavor. It comes in lots of other variations, so you can change this recipe easily by swapping out traditional Malibu rum with one of their other flavors. Not into coconut? Use a traditional light rum like Bacardi instead. 
  • Pineapple juice – Choose 100% pineapple juice for this recipe. Skip the juice blends or light pineapple juice. 
  • Cranberry juice – The pineapple and rum add a lot of sugar, so choose 100% cranberry juice to help balance out the sugar. If you love a sweet drink, then just cranberry juice cocktail with its added sugar. 
  • Fresh pineapple slices and leaves, garnish (optional) – You need a fresh pineapple for these garnishes, but they’re worth it – especially if you’re going to be making this drink for a party. If a whole pineapple for garnish seems like too much, float a few cranberries on the top of your drink instead. 

How to Make a Malibu Bay Breeze

Fill a highball glass with ice cubes.

Slowly pour in Malibu Original, pineapple juice and cranberry juice.

Malibu Bay Breeze Cocktail Recipe

A Malibu Bay Breeze combines Malibu coconut rum with cranberry and pineapple juices, creating a refreshing summer cocktail. Serve it poolside, at your next backyard barbecue, or summer party. This easy, make-in-the-glass cocktail is sure to impress your guests.

Ingredients
 

  • 2 oz Malibu Coconut Rum
  • 2 oz pineapple juice
  • 1.5 oz cranberry juice
  • Pineapple slices and leaves, garnish

Instructions
 

  • Fill a highball glass with ice cubes.
  • Slowly pour in Malibu coconut rum, pineapple juice, and cranberry juice.

  • Garnish with a slice of fresh pineapple and a couple pineapple leaves.

Recipe Tips

Use cranberry juice cocktail for a sweeter drink or 100% cranberry juice for a less sweet drink. 

Add a squeeze of lime juice to your drink for a less sweet sip. 

Swap out the plain coconut rum for other flavors of coconut rum. (Malibu makes lots of them!)
