Sweet, slightly spiced, and full of cozy orchard vibes, this syrup is the perfect way to upgrade your morning coffee, afternoon latte, or even a favorite fall cocktail. Made with real apples, warm cinnamon, and just a touch of vanilla, it captures everything we love about autumn in a smooth, pourable form.

This versatile apple syrup recipe can be used to recreate a Starbucks-inspired iced apple crisp macchiato at home. Not into coffee? Drizzle it over pancakes or waffles for an autumn breakfast treat, or stir it into sparkling water for a refreshing apple soda. With simple ingredients and a short simmer on the stove, you’ll have a rich and flavorful syrup that turns any drink or dish into a festive fall indulgence.

  • White sugar and Brown sugar – I like using a mix here to provide all the sweetness we need while still giving a little depth of flavor. You can use all white sugar if you prefer. All brown sugar will overwhelm the apple flavor. 
  • Chopped apples – Choose your favorite sweet apple for this recipe. I love using Gala or honey crisp apples. Skip the green apples or tart/sour apples. 
  • Cinnamon stick – Using cinnamon sticks will give you cinnamon flavor while making it easy to remove the cinnamon once the syrup is done cooking. Skip the ground cinnamon since it’s nearly impossible to get out, leaving a gritty texture in your syrup. 
  • Vanilla extract – Just a little bit of vanilla goes a long way in this recipe to enhance the flavor of the syrup without overwhelming the apples. 

How to Make Apple Syrup

Combine water, sugars and apples together in a small pot over medium heat. Bring to a simmer, stirring occasionally until sugar is dissolved. Reduce to medium-low heat and simmer for five minutes.

Remove from heat. Stir in remaining ingredients. Allow the mixture to cool to room temperature.

Store in an airtight glass container in the refrigerator for up to two weeks.

Fresh Apple Syrup Recipe

This homemade fresh apple syrup recipe is full of cozy fall flavor with real apples, cinnamon, and a touch of vanilla. Perfect for coffee drinks, cocktails, or drizzling over pancakes, this simple syrup is quick to make and adds a festive twist to any drink or dish.

Ingredients
 

  • 1 cup water
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 ½ cups chopped apples, about 2 small apples
  • 1 cinnamon stick
  • ½ teaspoon vanilla extract

Instructions
 

  • Combine water, sugars and apples together in a small pot over medium heat.

Recipe Tips

Measure the vanilla. I usually measure vanilla with my heart too, but in this case, the vanilla can easily overwhelm the flavor of the apples if you don’t measure it. You just want a small amount to enhance the apple flavor, not overwhelm it.

Don’t add the cinnamon too early. This is another flavor that can overwhelm the taste of the apples instead of enhance it if you add it too soon.

Don’t worry about peeling the apples. Wash and core the apples before roughly chopping into any size pieces you’d like. The peel will actually enhance the color of the syrup.

This cozy homemade apple syrup is incredibly versatile and makes it easy to add cozy apple flavor wherever you’d like. Here are a few easy ideas to try:

  • Coffee – Stir a spoonful into your morning coffee or latte for instant fall flavor, or use it to make a Starbucks-inspired apple crisp macchiato at home. (See recipe below.)

Combine 4 ounces of cold espresso (or ½ cup cold brew coffee), 1 cup oat milk, and 2 ounces of apple crisp syrup into a cocktail shaker. Add 1 cup of ice, cover and shake well. Pour mixture into a tall glass, sip, and enjoy!
