This delicious fresh Strawberry Gin Cocktail with ginger beer combines sweet strawberries with a little tart lime and spicy ginger beer for a fresh cocktail that is one of my top choices on hot days.

Some days I need an easy drink I can make in the glass. No cocktail shaker or mixing glass required. This fresh Strawberry Gin Cocktail with Ginger Beer is a single spirit cocktail – we’re only putting gin in it – so in a few simple steps we can have a tasty drink. 

Very similar to a strawberry gin smash, we’re starting with fresh strawberries (not strawberry syrup) and smashing them with a muddler to get that sweet strawberry flavor we want for this cocktail recipe. Fresh squeezed lime juice is another key ingredient and a great way to keep the sweetness in check. 

Ingredients

  • Fresh Strawberries – You can swap these out for thawed, frozen strawberry if needed.
  • Lime – Always squeeze fresh limes for your cocktail. You’ll need about half a lime per cocktail, so take the time to squeeze the fresh fruit. It makes a lot of difference in the taste of your drinks. 
  • Orange Simple Syrup – This adds sweetness and orange flavor to your cocktail without increasing the alcohol. You can swap it for your favorite orange liqueur if you prefer.
  • Gin – Choose your favorite gin for this recipe. I like a London Dry Gin, like Beefeater, for this one.
  • Ginger Beer – Choose your favorite brand or use ginger ale if you don’t like a strong ginger flavor.
  • Fresh mint (for garnish) – Optional, but I love what fresh mint adds when sipping the drink.

How to Make a Strawberry Gin Cocktail (Step by Step)

Place the fresh strawberry and lime juice in a rocks glass.

Add orange simple syrup and gin. Stir to combine.

Fill the glass with ice cubes and top with ginger beer. Stir gently.

Garnish with lime wedges, a slice of strawberry, and/or fresh mint leaves. Sip and enjoy!

Strawberry Gin Cocktail Recipe

This easy strawberry gin cocktail is made with fresh strawberry and lime, homemade orange syrup and topped with ginger beer for a refreshing drink on a hot day.

Ingredients
 

  • 1 fresh strawberry, sliced
  • 0.5 oz lime juice, fresh squeezed
  • 1 oz orange simple syrup
  • 1.5 oz gin
  • 2 oz ginger beer
  • Fresh mint, garnish

Instructions
 

  • Place the fresh strawberry and lime juice in a rocks glass.
    1 fresh strawberry, 0.5 oz lime juice
  • Muddle to break up the strawberry slices.
  • Add orange simple syrup and gin.
    1 oz orange simple syrup, 1.5 oz gin
  • Stir. Fill the glass with ice.
  • Top with ginger beer.
    2 oz ginger beer
  • Stir gently.
  • Garnish with a slice of strawberry and/or a fresh mint sprigs.

  • Sip and enjoy!

Notes

To make orange simple syrup, combine 1 cup sugar with 1 cup hot water. Stir until the sugar has dissolved. Add in 1 – 2 inch piece of orange peel. Refrigerate for 4 hours or overnight. Remove orange peel. (Do not leave orange peel in for more than 24 hours.)

Recipe Tips

  • While frozen fruit will work, for the best flavor and sweetness use ripe strawberries in this cocktail. Ripe, fresh fruits will also be easier to crush.
  • If you don’t have a muddler on hand, use a wooden spoon to break down and mash the strawberries in your glass. 

FAQs and Substitutions 

Does ginger beer have alcohol in it? 

No. Like its cousin root beer, ginger beer is a soda, not a beer. It has a strong ginger flavor that makes it an excellent mixer for cocktails and mocktails. 

What can I use instead of ginger beer? 

This smash cocktail is definitely designed to be made with ginger beer, or at least ginger ale. But if you don’t like ginger beer or don’t have any on hand, top off your cocktail with a splash of club soda, soda water, or tonic water. Or use lemon lime soda to keep it sweet.
