The best part is that this flatbread recipe will turn family pizza night into an easy weeknight dinner. Similar to the bbq chicken pizza at California Pizza Kitchen, this grilled bbq chicken flatbread pizza is sure to be your new favorite way to get dinner on the table in a hurry. It's a great way to use up leftover chicken or the rotisserie chicken you bought at the store.
No air fryer or other special kitchen equipment needed! Use your grill or cook the pizza in your oven, if you prefer. (Directions for oven in the FAQs below.)
This recipe is light enough to be an appetizer. Cut the flatbread into small, 2 inch pieces, and serve it at your next backyard happy hour. It goes really well with my paloma cocktail or paloma mocktail.

Tips
Buy a cooked chicken. Speed up the prep time on this flatbread by purchasing a rotisserie chicken at the grocery store.
Add other pizza topping options. This easy flatbread pizza is also delicious with cooked bacon, fresh pineapple, green pepper, red bell pepper, and/or green onion on it. Add any that you like to the bbq chicken flatbread pizza before you cook it.
Cook your chicken ahead of time. Use my slow cooker roast chicken recipe to do the least amount of work to make a juicy, tender chicken at home. Perfect for when you don’t have time to stop at the store, or already have raw chicken in the fridge ready to cook.
Frequently Asked Questions
Use any kind of barbecue sauce you like in this recipe. (Sweet Baby Rays is a favorite!) You can also tone down the bbq flavor by putting the sauce in a small bowl and mixing in a little ranch dressing before spreading it on the flatbread crusts. This can help make the flatbread more kid-friendly if you have picky eaters who don’t like the chili powder in regular barbecue sauce.
Absolutely! Fresh corn cut off the cob would be delicious on this grilled flatbread.
Preheat your oven to 400 degrees. Follow the recipe, but instead of placing the prepared flatbread onto the grill, bake the flatbreads on ungreased cookie sheets for 10-12 minutes or until the bottom is crispy.
I get mine from the freezer section at Trader Joes - they have garlic naan bread and traditional naan bread. Many grocery stores carry it in their deli section near the specialty breads and flatbread wraps.
