    How to make honey simple syrup.

    Easy to make with only two ingredients, honey simple syrup adds delicious flavor to a variety of cold drinks, coffee drinks, cocktails, and mocktails.

    Along with traditional simple syrup and brown sugar syrup, honey syrup is one of the ingredients for my home bar that I always keep on hand. Besides using it in cocktails and mocktails, it is delicious for sweetening lemonade and iced tea. I also love it to sweeten my morning coffee or an iced Café Meil latte in the afternoon. 

    Like regular simple syrup's combination of white sugar and water, honey syrup is a one-to-one ratio of honey to water. Which makes it easy to scale this honey syrup recipe into smaller or larger amounts, depending on what you need and how much you use it. 

    Made with simple ingredients, this sweet syrup is the perfect way to add delicious honey flavor to cocktails and mocktails. When I'm entertaining, homemade honey syrup is always available on my cocktail bar and mocktail bar. 

    What's in Honey Simple Syrup

    Ingredients for honey simple syrup.
    • Honey - Clover honey, wild honey, raw honey - the choice is yours. Use what you have on hand and/or what you have access to. 
    • Water - Whatever water you drink is what you should use here. If you filter all the water you drink, use that in your syrups. 

    Make Honey Syrup on the Stove Top

    In a small saucepan over medium heat, bring water to a low boil. Remove from heat.

    Add in honey.

    Stir until the honey has completely dissolved and melted into the hot water.

    Allow the mixture to cool to room temperature. Pour into an airtight container like a glass bottle or mason jar. 

    Cover and store in the refrigerator until ready to use.

    Make Honey Syrup in the Microwave

    Heat 1 cup of water in a microwave safe container (like a glass measuring cup or mug) for 2 to 3 minutes until nearly boiling.

    Carefully stir until the honey dissolves and is fully mixed in. 

    Cool to room temperature.

    Cover and store in the refrigerator until ready to use.

    Recipe Tips

    • Honey syrup will keep in the refrigerator for up to three weeks. Discard if the syrup turns cloudy or changes color in any way. 
    • Always store your honey simple syrup in the refrigerator, never at room temperature. 
    • The type of honey you use will create a subtle flavor variation for your honey syrup.

    Variations

    Create different flavors of honey syrup with these fun add-ins: 

    • Cinnamon Honey Syrup: Add one or two cinnamon sticks to the hot syrup, and let the cinnamon infuse while the mixture comes to room temperature. Remove the cinnamon stick(s) before storing in an airtight container. This variation is delicious as a liquid sweetener in iced lattes and or iced coffee.
    • Lavender Honey Syrup: Add 1 tablespoon of dried lavender flowers to the hot syrup. Let the lavender infuse while the syrup comes to room temperature. Strain the syrup through a fine mesh strainer to remove the lavender before storing in the refrigerator. This variation is particularly delicious in lemonade, iced tea, and a Lavender Bee's Knees cocktail.

    Ways to Use Honey Syrup

    Honey syrup is delicious in a variety of drink recipes! 

    • Mixed with fresh lemon juice and club soda or cold water for honey lemonade. 
    • Use it to sweeten your favorite iced tea.
    • In honey syrup cocktails! Try one of these honey cocktail recipes: Bee's Knees, Lavender Bee's Knees, Orange Honey Gin Cocktail (pictured below).
