Ingredients 

Ingredient for a Pot of Gold St Patrick's Day mocktail.
  • Pineapple juice – Choose 100% pineapple juice. No blends. No “light” versions. 
  • Orange – If you’re making these as individual cocktails, squeeze a fresh orange. You’ll need about half a naval orange per mocktail. 
  • Simple syrup – An easy combination of water and white sugar, simple syrup is quick to make at home with these pantry ingredients. Store it in the fridge and it’ll last for weeks. 
  • Lime – Fresh citrus makes the best drinks, so take the time to squeeze limes for this drink. You should need no more than 1 lime per drink. 
  • Ginger Beer – My favorite ginger beer is Goslings because I like its sharp and strong ginger flavor. 
  • Edible gold glitter, optional garnish – Is this necessary? Of course not. Is it insanely fun and totally worth it? Absolutely. I’ve linked you below to the exact one I use. There’s no flavor or texture to it and it adds so much to a drink called “pot of gold.” 
  • Rainbow candy, optional garnish – Again, not necessary but so fun. I get these in the candy section up by the cash registers of my local, big box grocery store. They’re Airhead Extreme brand. It’s a sour candy, but if you set them on the top of your drink like I’ve done in the photos the sour flavor won’t touch you’re drink.

How to Make a Pot of Gold St. Patrick’s Day Mocktail

In a cocktail shaker half filled with ice, combine pineapple juice, orange juice, simple syrup, lime juice.

Strain into a coupe glass or martini glass.

Thread the rainbow candy onto a long cocktail pick and set it gently on your glass rim to garnish.

Pot of Gold St. Patrick’s Day Mocktail

Celebrate St. Patrick’s Day with this vibrant, non-alcoholic Pot of Gold Mocktail! Combining sweet pineapple juice, zesty lime, and refreshing ginger beer, this festive drink is beautifully garnished with edible gold glitter and rainbow candy. Perfect for all ages, this fun and fruity mocktail will make your celebration extra special!

Ingredients
 

  • 2 oz Pineapple juice, 100% juice
  • 1.5 oz Orange juice, fresh squeezed
  • 1 oz Simple syrup
  • 0.5 oz Lime juice, fresh squeezed
  • 1.5 oz Ginger beer
  • teaspoon Edible gold glitter, garnish, optional
  • 1 piece Airheads Rainbow candy, garnish, optional

Instructions
 

  • In a cocktail shaker half-filled with ice, combine pineapple juice, orange juice, simple syrup, lime juice, and edible glitter.
    2 oz Pineapple juice, 1.5 oz Orange juice, 1 oz Simple syrup, 0.5 oz Lime juice, ⅛ teaspoon Edible gold glitter
  • Cover and shake well.
  • Strain into a coupe glass or martini glass.
  • Top with ginger beer.
    1.5 oz Ginger beer
  • Thread the rainbow candy onto a long cocktail pick.
    1 piece Airheads Rainbow candy
  • Set it gently on your glass rim to garnish.
  • Sip and enjoy!

Recipe Tips

Like its root beer cousin, ginger beer is a soda and contains no alcohol. Find it in the mixer section of the liquor store or your grocery store.

If you can’t find or don’t want to use rainbow candy (this is Airheads Extreme sour candy) to garnish this mocktail, use a wheel of fresh orange or lime or a slice of pineapple – or all 3 – instead. 

The edible glitter has zero flavor or texture and is completely optional. But it’s super fun and worth picking up ahead of time. I get mine online. (It’s the exact one I link to on this page.) 

Make Your Own Simple Syrup

Simple syrup is equal amounts of white sugar and water, so it’s easy to make at home. I make mine in the microwave! Get my recipe plus all of my tips and tricks over on my simple syrup recipe page

By the Pitcher

Hosting a St. Paddy’s Day party? Make a pitcher full of these Pot of Gold Mocktails!

Batch Instructions (Serves 8)

  • 16 oz (2 cups) pineapple juice
  • 12 oz (1.5 cups) orange juice (fresh squeezed or no pulp if bottled)
  • 8 oz (1 cup) simple syrup
  • 4 oz (0.5 cup) lime juice (about 4 limes)
  • 4 oz (0.5 cup) cold water
  • 1 teaspoon edible gold glitter (if using)
  • 12 oz (1.5 cups) ginger beer
  • 8 pieces of Airheads Rainbow candy

Combine pineapple juice, orange juice, simple syrup, lime juice, cold water, and edible glitter in a large pitcher. Refrigerate until ready to serve. Refrigerate a 12 ounce can of ginger beer alongside the pitcher. 

To Serve

Stir the contents of the pitcher well. Pour into coupe or martini glasses. Top each glass with 1.5 ounces of chilled ginger beer. 

Thread each rainbow candy onto a long cocktail pick. Set them gently on the rims of the glasses to garnish.

Make it a Cocktail

Turn this Pot of Gold Mocktail into a cocktail by adding 1.5 oz of white rum to your cocktail shaker alongside the pineapple juice. Or if making a pitcher of mocktails, add 12 ounces of white rum when adding the pineapple juice.
