Spinach Dip Pasta

Cook 8oz dried pasta. Drain. Do not rinse. Set aside. Melt butter in a large pan. Stir in flour and cook, stirring frequently, until the mixture begins to brown.

Add milk. Reduce heat. Stir in garlic powder, onion powder, salt, pepper and nutmeg. Add Swiss cheese and lemon juice, stirring well. Cook until all cheese has melted.

Stir in fresh spinach, working in batches if necessary, until all of it has wilted into the sauce. Fold in tomatoes and cooked pasta.

Adjust salt and/or pepper  to taste. Enjoy as a vegetarian main dish or as a side dish to grilled chicken or fish.
